The grapes come from two special vineyards, one of which is located at the foot of Mount Juktas  700 meters from the archaeological site of Vathypetro. The vines are dry-growing with a production of just 600 kilos per hectare.

Vinification: The harvest for the year 2024 took place on August 22-23, while for the year 2023 it took place on September 9-10 and was followed by classic white vinification with pre-fermentation cryoextraction. Only the free-run juice was vinified at a controlled temperature in a stainless steel tank. Autolysis of the yeasts took place inside the tank, where the wine remained for about six months.

Ageing potential: We believe that the wine will evolve exceptionally for a long time.

Tasting notes: Gastronomic white wine. Lemon notes with mineral elements and continuous evolution in the glass with structure and volume. Unique taste that cannot be identified with any other variety. Raw preparations with fish, shellfish, Japanese and Nikkei cuisine are ideal matches. Recommended temperature: 13ο C
