Taste: Medium-bodied with silky tannins and fresh acidity. The fruit character is clean and multi-layered – cherry, blackberry, and red currant – balanced by earthy notes. The texture is velvety, with a persistent, elegant finish.

Food pairing: Red meat, grilled lamb chops, beef fillet, slow-cooked beef, roast duck, rabbit stew.

Cooling at 8-10 degrees for 4 days. Gradual increase in temperature. Fermentation for 14 days. Only must without pressure.
Aged for 12 months in French oak (2nd use) 225 liters and 12 months in bottle.
