The fruit character is clean and multi-layered \u2013 cherry, blackberry, and red currant \u2013 balanced by earthy notes. The texture is velvety, with a persistent, elegant finish.<\/p>\n<p>Food pairing: Red meat, grilled lamb chops, beef fillet, slow-cooked beef, roast duck, rabbit stew.<\/p>\n<p>Cooling at 8-10 degrees for 4 days. Gradual increase in temperature. Fermentation for 14 days.
